Vineyard Notes
The beautiful Château Gilbert & Gaillard estate is located on exceptional terroir — an Eocene limestone plateau, 200 meters above sea level to the south of the Saint-Chinian appellation. The limestone and pebble soils cultivate a balance between fruit and exuberance. All the work is hands-on at this 15 hectare “boutique” estate. No weed killers, chemicals, or sprays are used and grapes are harvested manually. The vines are 10 years old.
Production Notes
The grapes are destemmed and sorted by hand on a conveyor belt and then placed in stainless steel vats. The vatting lasts 8 to 10 days and is characterized by gentle extraction via shedding at the start of fermentation. The post-fermentation maceration is calibrated according to daily tastings of the juices. The wine is not intoned in order to preserve the expression of the fruit, resulting in a remarkable minerality. La Cuverie, "the vat room," is impressive at this winery. Tulip-shaped concrete tanks improve the immersion of the pomace cap. The stainless steel tanks are temperature-controlled with coils inside. The vat room is customized for plot-based vinification, meaning grape varieties can be fermented separately, for easier blending.
Winemaker Notes
This domaine is owned and operated by Mssrs GIlbert and Gaillard, owners of the famous French glossy wine magazine. They chose the ancient limestone soils of the Languedoc to create signature cuvées of freshness, finesse, and elegance from hand-harvested grapes. Gilbert & Gaillard’s winemaker, Marine Faugier, is an up-and-coming young female winemaker.
