Vineyard Notes
These sloped vineyards border the vast grain fields of the Languedoc that extend to the Pyrenees mountains. The plots are 20 years old, planted in soils of clay and silt exposed on a south-east facing slope at an altitude of 350 meters.
Production Notes
Harvesting is done manually at the peak of ripeness. Grapes are crated and transported in small quantities to limit crushing. Whole destemming is followed by maceration for five to six days at low temperatures (46-50°F). Traditional fermentation takes place in closed vats with daily pumping over. Additional methods include long vatting, soft pressing with selection of juices, and aging in 500 liter barrels.

Domaine Girard is a fourth-generation family domaine in the Malpere region just at the foothills of the Pyrenees Mountains where the vast grain fields begin. These brilliant winemakers were recommended to us by two of the finest winemakers in the Languedoc. We have thanked them ever since. Everything this family domaine creates is delicious.
