Sommelier note: One of the less know appellations in the Languedoc is situated north of Carcassonne and is called the Caberdès. The climate is different here, although we grow mediterranean grapes like Syrah and Grenache, but also more Continental grapes like Cabernet and Merlot grow very well here too! It is a fascinating “goes both ways”” zone. Domaine de Cabrol has a total surface of 120 ha. but only 21 ha. are planted with vines. The rest is forest and garrigue. Interesting terroir! Claude and Nicolas Carayol have run the winery since 1989. Harvest is done partly by hand, some by machine depending the wine they want to make. Parcel by parcel will end up in another tank in the cellar, where soft extraction of color from the skins take place. The Syrah is fermented as a whole bunch allowing soft tannins to the wine! Some of the wine is matured in oak barrels.
The Blue Note is a blend of Grenache and Syrah from selected parcels. The wine is elegant, full of fruit and easy drinking. You can find aromas like blackberry, violets, some spiciness. Open a bottle, or two, with friends and there is no end to the evening!
