Sommelier note: Limoux, not Champagne, is the birthplace of sparkling wines. Long before sparkling wine was made in the Champagne area, the monks in the Abbaye of Saint-Hilaire in Limoux discovered the way to produce this lovely bubbly wine! Domaine J.Laurens is a small producer here in the area, and the name is a guarantee for quality! Jacques Calvel and his team handle their bottles like their children. The appellation requires hand picked grapes and for the classic Blanquette de Limoux it should be at least 60% local Mauzac grapes. In addition to Blanquette, we have unique Crémants throughout the Limoux region. For the J Laurens Crémant we use Chardonnay, Chenin Blanc and Pinot Noir grapes. The grapes are gently and slowly pressed to produce a nice juice called « cœur de presse ». The first fermentation takes place in vats under temperature control. This Rosé N°7 is aged for a minimum of 12 months in cellars. The cuvée then gets the classic second fermentation in the bottle for at least 9 months.
This crémant La Rose N°7 has a subtle cherry color with a nice, rich raspberry nose. On the palate, red fruits are lightly present and Pinot Noir brings all the fullness. The bubbles are delicate and the style is fresh, and vigorous. Rose N°7 is perfect for an aperitif and could be served with pink meals like smoked salmon, and shrimp salad. It also matches desserts or ice-cream made with red fruits, like strawberry ice cream. Serve this bubbly in elegant small glasses called ‘Flûte’ and serve it quite chilled out of the fridge. Santé!
NOTE ON THE LABEL: With a nod to a very famous perfume, the domaine is celebrating femininity. The number 7 is for the 1st time the domaine elaborated their sparkling rosé, in 2007.
