Wine Profile
Vineyard Notes
Domaine Girard practices sustainable agriculture. The vineyards are the last expanse of land before the vast Languedoc grain fields begin, stretching all the way to the Pyrenees. Parcel "Pech Calvel" sits on a northwest-facing hillside at an altitude of 1,150 feet.  The elevation and cool nights are perfect for “Continental grapes” like Pinot Noir. The plot is 10 years old, with clay and silt soils and some pebbles.
Production Notes
Harvesting is done manually at optimal ripeness. The grapes are transported to the winery 5 minutes away in small crates to limit crushing. Whole destemming is followed by maceration for six to seven days at low temperature (8-10°C). Fermentation takes place in open vats with pumping over, punching down, and load shedding. A three-week period of vatting and pressing is observed. The wine ages in 500L French oak barrels for eight to ten months.
Winemaker Notes
Domaine Girard is a fourth-generation family domaine in the Malepere region just at the foothills of the Pyrenees Mountains where the vast grain fields begin. These brilliant winemakers were recommended by two of the finest winemakers in the Languedoc. We have thanked them ever since. Every wine created by this family domaine is delicious.
Food Pairing Notes
For a full-flavored, satisfying culinary experience, pair with Cuban Roast Pork with mashed sweet potatoes.
