This exceptionally delicious blend is equal parts Colombard and White Grenache. The wine is deceptively pale in color with green sparkles in your glass, and then surprises with very expressive fruit in the nose, mango and lime.  These aromas develop in the mouth into full roundness, an herbal delight of lemongrass and anise with a touch of white peach and ripe melon.  The Colombard gives a fresh, crisp lift that makes this wine wonderful with food. 

Delicious with Green Papaya Slaw and Prawn Salad, Fish Tacos with Mango Salsa, Prawns in Lemon Butter Ouzo Sauce, and both fresh and aged goat cheeses.

Vineyard Notes
La Voûte du Verdus is situated in the appellation Terrasses du Larzac, north of Montpellier, in the breathtaking village of Saint-Guillem-le-Desert. It’s vineyards are spread over the municipalities of Aniane and Saint-Jean-de-Fos where some of the most famous wines of the Languedoc are made. The vines grow on southeast-facing hills in soils of clay and limestone. Cooling winds from the Black Mountains keep the grapes from ripening too quickly. The longer grapes sit on the vine, the more complex the flavors. Complexity equals delicious! 20 hectares of vineyards are planted with local grapes like Syrah, Grenache Noir, Carignan and Mourvèdre for red wine and Grenache Blanc and Colombard for white.
Production Notes
Grapes are hand-harvested in small crates to keep the grapes unbroken until they reach the nearby winemaking cellar located in the heart of the village of St Guilhem le Desert. Direct press fermentation takes place in thermo-regulated stainless steel vats. The wine remains on fine lees until February in order to preserve all the aromatic expression and finesse of this complex and delicate wine.
Winemaker Notes
La Voûte du Verdus is a family-owned domaine that has been operating for over 100 years in the medieval town of Saint-Guillem-le-Desert, an ancient commune officially designated as one of the Plus Beaux Villages de France. La Voûte du Verdus (“Vault of the Verdus River”) is so named because the cave in which the Bonnet family makes the wine sits atop the Verdus River flowing underneath. This award-winning winery maintains 20 hectares of vines from local grapes such as Syrah, Grenache Noir, Carignan, Mourvèdre, Grenache Blanc and Colombard.
