Vineyard Notes
The terroir is alluvial marls from the Roussillon plain.
Production Notes
The destemmed grapes are put directly into a 700-liter terracotta egg. Maceration lasts 4 weeks, then the amphora is emptied, and the grapes are pressed. The wine completes the fermentations in the same egg. The ovoid shape allows a perpetual movement of the lees and a stabilization of the fat. This vinification technique favors the varietal aromas of the grape variety while accentuating the minerality.
Winemaker Notes
Loved by wine critic Jeb Dunnick, this domaine is run by the husband-and-wife team, Séverine and Philippe Bourrier. Séverine came to winemaking through raw passion, rather than family tradition and legacy. She studied oenology and worked in Bordeaux for a decade before becoming one of the finest female winemakers in the Roussillon. Philippe is the wise, earthy agronomist. Together, they restored an old château, revived vineyards and rechristened the estate L’Ou, Catalan for "egg," a reference to the oval-shaped valley surrounding the estate.
