Initiale is a classic Saint-Chinian blend — Syrah imparts spiciness and black pepper; Grenache Noir bestows soft fruit; Carignan expresses a rustic leather tone; and Mourvèdre offers warm hints of tobacco and chocolate. Aromas of blackberry and cherry jam are laced with toasted bread and pepper. A tender, joyful palate carries a trace of tannin, enhancing the finish.

Casual is the watchword for this relaxed red. Serve with cold cuts, barbecue, or a hard, salty cheese platter with almonds.

Wine Profile
Vineyard Notes
Saint-Chinian has a very typical terroir dominated by two main soil types: schiste (slate) in one area and clay/limestone in the other. Domaine Des Jougla’s vineyards are planted in both types of soil, creating complexity in the wines. The vines are situated within the garrigue, a mix of pine trees, oak, and herbs such as rosemary, fennel, and thyme. Hints of the garrigue can be found in the nose of this wine.
Production Notes
Traditional vinification includes three weeks of maceration. Aging takes place in vats.
Winemaker Notes
Laurence Jougla, a leading lady of Languedoc winemaking, oversees the vinification for Domaine Des Jougla. She inherited her winemaking expertise from generations of family winemakers. The winery was built in 1900 and features century-old wooden casks, ancient carved stone fixtures, and a display of historical tools once used to tend the vines.
Food Pairing Notes
