Wine Profile
Vineyard Notes
The domaine has 14 hectares (35 acres). A one acre parcel is reserved for Reserve d'O Blanc and planted with Chenin Blanc, Roussanne, and Grenache Blanc. The vineyards are 1,312 feet above sea level and strongly influenced by the winds of the Plateau du Larzac which blow from the north 250 days of the year. The soil is stony, clay, and calcareous. The 35-year-old vines are goblet-trained. In keeping with biodynamic practices, the winemakers refrain from interventions whenever possible. When needed, they spray solutions of horn manure, silica, nettle and horsetail infusions in place of chemicals.
Production Notes
Grapes are manually harvested then vinified together. Direct pressing is followed by co-fermentation in stainless steel vats. The fruit is then transferred to 500 liter French oak barrels for aging. The winemakers use indigenous yeast. During the bottling process, sulfites are added in moderate amounts (total: 60 mg/L).
Winemaker Notes
Domaine de La Réserve d'O was founded in 2005 by the husband and wife team, Marie and Frederic Chauffray. Marie searched for 10 years before finding her perfect vineyards, overlooking the Herault Valley in the prized Terrasses du Larzac appellation in the Languedoc. Today, on this windswept limestone ridge, Marie and Frederic produce organic, biodynamic wines which express the essence of this extraordinary terroir.
