Vineyard Notes
The vineyards are just to the south of Perpignan near the Mediterranean coastal plains and they have fabulous schiste vineyards high up in the mountains of the Agly Valley above 1,000 feet elevation. The entire terroir is farmed organically.
Production Notes
The handpicked grapes go directly into oak barrels. After 3-4 weeks every barrel is emptied and cleaned, the must is pressed, and the juice goes back into the same barrels to finish fermentation and aging.
Winemaker Notes
Loved by wine critic Jeb Dunnick, this domaine is run by the husband-and-wife team, Séverine and Philippe Bourrier. Séverine came to winemaking through raw passion, rather than family tradition and legacy. She studied oenology and worked in Bordeaux for a decade before becoming one of the finest female winemakers in the Roussillon. Philippe is the wise, earthy agronomist. Together, they restored an old château, revived vineyards and rechristened the estate L’Ou, Catalan for "egg," a reference to the oval-shaped valley surrounding the estate.
Food Pairing Notes
This wine radiates elegance yet is rich and robust enough to pair with grilled meats, duck, and lamb.
Other Notes
Ageability: Decant for an hour and drink now through 2026 and beyond. Serve slightly chilled at 65 degrees.
