Everything Katie Jones touches has a distinctive personality, where you can always taste the wild herbs of her vineyards. This is primarily because she buys very small old vineyards, most of them comprised of interesting and rare grape varieties.  She vinifies each parcel of hand harvested grapes separately, so she knows exactly what she has.
