Vineyard Notes
Château Gilbert & Gaillard is located on an exceptional terroir, a limestone plateau 200 meters above sea level to the south of the Saint-Chinian appellation. The limestone soils produce wines with an excellent balance of fruit and exuberance. The 15-hectare estate operates on a boutique scale. All of the work is done manually, including the harvest. No weed killers, chemicals, or sprays are used. The vines are 10 years old. The domaine is in year 2 of 3 to organic conversion.
Production Notes
The grapes are harvested, destemmed and sorted by hand on a conveyor belt and then placed in stainless steel vats. The vatting lasts 8 to 10 days, with gentle extraction.. The post-fermentation maceration is guided by daily tastings of the juices with the goal of preserving the expression of the fruit and maintaining remarkable minerality. La Cuverie, "the vat room," is impressive. Tulip-shaped concrete tanks improve the immersion of the pomace cap. The stainless steel tanks are temperature-controlled with coils inside. The vat room is customized for plot-based vinification, meaning grape varieties can be fermented separately, for easier, more precise blending.
Winemaker Notes
This domaine is owned and operated by Mssrs GIlbert and Gaillard, owners of the famous French glossy wine magazine. They chose the ancient limestone soils of the Languedoc to create signature cuvées of freshness, finesse, and elegance from hand-harvested grapes. Gilbert & Gaillard’s winemaker, Marine Faugier, is an up-and-coming young female winemaker.
