Vineyard Notes
The vines are farmed organically on the brown schist soil of the Maury terroir.
Production Notes
The grapes are meticulously selected then placed directly into 500 liter barrels. A cooper (barrel maker) comes to the winery to seal the barrels (only one of the barrel’s two bottoms is sealed).The wine ferments in these barrels and then is aged in the same barrels for 10 months.
Winemaker Notes
Loved by wine critic Jeb Dunnick, this domaine is run by the husband-and-wife team, Séverine and Philippe Bourrier. Séverine is the talented, passionate winemaker. Philippe is the wise, earthy agronomist. Together, they restored an old château, revived vineyards and rechristened the estate L’Ou, Catalan for "egg," a nod to the oval-shaped valley surrounding the estate.
