Sommelier Notes: Séverine Bourrier came to winemaking through raw passion, not having a family history of winemaking like so many other Languedoc-Roussillon winemakers. She studied oenology in school and worked in Bordeaux for a decade. Together with her husband Philippe, an agronomist, they restored an old château, replanted some new vineyards and rechristened the estate L’Ou, which is Catalan for "egg” as the property is in an oval-shaped valley. The main Château de L’Ou grape variety is Syrah. This "Infiniment" Côtes Catalanes comes from the marl and alluvial soils near the estate.
This wine spent 14 months in 300-liter oak barrels. It has a powerful nose with rich, ripe fruit and big spice box aromas. It glides silky across the palate, refined and elegant like the winemaker Séverine. It’s drinking great today but will keep for 10-12 years. Decant for an hour and serve slightly chilled.
