Sommelier note: A true family domaine, the Bonnet clan is running this estate. The father Guilhem is third generation and was “born in the vineyard” you might say. The domaine is situated in the appellation Terrasses du Larzac, all the way north of Montpellier in the breathtaking village of Saint-Guillem-le-Desert. This award winning winery produces wines on 20 ha. of vines from local grapes like Syrah, Grenache Noir, Carignan and Mourvèdre for red, Grenache Blanc and Colombard for white.
This top red cuvée is a beast! Carignan is KING over here and the terroir on altitude gives generous fruit with concentration. Carignan likes to work hard to get the roots deep into the ground and 40 year old Carignan is like a young man! You can find more than 100 year old vines still in full production here. The Carignan is a true Mediterranean varietal totally adapted to the climate. Princess loves everything Carignan! Together with Mourvèdre this is the heart of the blend. Syrah and Grenache Noir are like salt and pepper in the blend. All hand picked grapes, destemmed, end up in the vats for fermentation and maceration. The wine ages in French oak barrels for 12 months. Result is a deep red wine with spicy and leather aromas in the nose, soft and silky tannins and a long aftertaste with a nice freshness without being heavy. Perfect wine with game, duck confit, hard cheeses.
