The vineyards are cultivated in soils of basalt, clay, and limestone.
Production Notes
Fermentation takes place in small, temperature-controlled concrete vats with gentle pumping of the cap. The juice ages in barriques (60 gallon barrels) and demi-muids (158 gallons barrels) for 12 months.
Winemaker Notes
Christine Mouton Bertoli and her husband, Stéphane, have built a first-class winemaking facility to support their mission to make quality, fine wines. We declare “mission accomplished!” The vineyards and winemaking cave are near the famous antique market town of Pézenas. The domaine includes 37 acres of organically farmed grapes and olive trees.
