All of the wines we carry at Princess and Bear have small case productions and as each vintage varies from year to year, we want to offer tasting notes and technical information on past vintages we've carried for reference.

These wines are made by the most passionate winemakers and have a finesse and complexity that will keep you coming back for more. Many of the winemakers are contrarian and make wines in their own passionate way regardless of tradition or requirements to be an AOC wine.
Our many organic selections are presented below with the European Union organic leaf designation. Organic wines in the EU can use small amounts of organic sulphur, which helps make the wines remain stable over time.

Vin de France
100% Roussanne
This lively biodynamic wine is made from hand harvested white Roussanne grapes but vinified like a red wine-with five days of juice and skin contact. The result is a delicious and complex orange wine with mimosa, saffron, stone and yuzu flavors. It changes beautifully as it breathes and opens up. It is heavenly with Curried Chicken Salad!

IGP Pays d'Oc
40% Syrah, 40% Grenache, 20% Colombard
This thirst-quencher is juicy and crisp with notes of pink grapefruit and small red fruits. The addition of Colombard in this rosé is very delicious! The organic vineyards sit near the Mediterranean Sea so they are bathed in sea breezes giving a special freshness to this wine.
IGP Pays d’Oc
100% Vermentino
A crisp white wine with a luminous sparkle, this Vermentino bathes the palate in pears and melon with surprising hints of jasmine and grapefruit. The smooth mineral finish enlivens and refreshes. Crafted by a family domaine of passionate winemakers, this wine is a pure varietal expression of terroir.

IGP Côtes Catalanes
60% Grenache Noir, 40% Syrah
This organic rosé dazzles with intense red fruit aromas of ripe raspberries. Lively on the palate, even tangy, its freshness lingers then resolves into bright minerality. The family-run domaine was founded in the early days of the Languedoc-Roussillon’s wine making renaissance. The vineyards lie in a valley where every one of the vineyard owners farms organically, so this is the purest fruit anywhere.

Vin de France
100% Carignan
Carignan is KING of red grapes here! Totally adapted to this rough climate this is a stunning varietal if you keep yield low. Dark red fruit, leather tones and smashing fresh finish. Carignan is seeing something of a renaissance as old vines (and these are over 100 years old) and small yields make a lovely, concentrated, big wine. Only 200 cases produced.
Vin de France
100% Nielluccio
This rosé has lovely floral aromas and a special charm that comes from the Nielluccio grape which is native to Corsica, a French Island near the Languedoc. The grape is genetically similar to the Tuscan grape Sangiovese. The wine has peach notes and you can find a whiff of wild plants, like lavender and even perhaps an herbal touch of thyme.
AOC Limoux
90% Chardonnay, 10% Chenin Blanc
“La Coume Lumet” is an Occitan phrase meaning “Valley of Light,” a fitting descriptor for this dazzling, Chardonnay-dominant blend kissed by the crispness of Chenin Blanc. Aromas of pear and roasted almond caress the nose. The rich mouthfeel melts into a finish of buttery, toasted notes. The vineyards are maintained using sustainable, responsible viticulture and Terra Vitis certified.

AOP Languedoc
40% Vermentino, 40% Clairette, 20% Bourboulenc
Balance is the secret of this award-winning, organic white — a crisp blend of Clairette, Vermentino, and Bourboulenc. The fine, tonic nose expresses flowers and citrus. The mouth is a perfection of volume and freshness. The mineral finish is rich in character. An outstanding wine of native Mediterranean grape varieties!
AOP Minervois
100% Carignan
Food Pairing: This is a cool night companion with grilled duck breast, pheasant Milanese with wild mushrooms or a fabulous dry aged rib eye with garlic butter!!

AOP Languedoc
45% Syrah, 23% Grenache Noir, 16% Alicante, 16% Carignan
La Diva is a concentrated, elegant and supple wine with a beautiful complexity, it has all the character of a Grand Vin! The wine starts off very fruity (blueberries, blackcurrants) and opens up in your mouth revealing the finesse. Matured lightly in neutral French oak barrels, this mellows the tannins and gives the wine a super smooth, long finish.

AOP Côtes du Roussillon - Caramany Villages
70% Syrah, 30% Carignan
An organic cuvée with a dazzling garnet color, Le Plus Joli emanates aromas of blackcurrants then blossoms into violets, licorice, and cocoa. The light structure and silky texture of this unforgettable wine will enchant you.
