This organic Macabeu varietal expresses a complex floral nose with hints of white stone fruits. The palate is crisp and balanced. This family-run domaine was founded in the early days of the Languedoc-Roussillon’s wine making renaissance. The vineyards lie in a small valley where every one of the vineyard owners farms organically, so this wine begins with the purest fruit anywhere.

60% Grenache Noir, 40% Syrah
This organic rosé dazzles with intense red fruit aromas of ripe raspberries. Lively on the palate, even tangy, its freshness lingers then resolves into bright minerality. AOP Corbière Boutenac
35% Carignan, 35% Grenache, 30% Mourvèdre
An organic blend of Carignan, Mourvèdre and Grenache, Indécent expresses bold fruit with notes of spice and wood. The sultry flavors linger with an extra long finish. The 80-year-old Carignan vines impart the rich character of this biodynamic domaine’s distinct terroir.
IGP Coteaux d'Enserune
A study in lush, floral debauchery, this organic Viognier tantalizes with a nose of citrus, lychee and lemon blossom and a fluid, lively mouth. In the hands of the owner and oenologue Stéphane Yerle, the viognier expresses masterfully. The wine is well balanced with just a hint of acidity to keep the palate alive and interested.
70% Grenache Blanc, 30% Roussanne
Food pairing: This wine which comes from “The Cathedral“ vineyard will bring you to your knees when served with Blue Cheese and Pear pastry appetizers; Roast Yuzu Chicken and Japanese slaw with Mirin Vinaigrette; or Tagliatelle of Wild Mushrooms.
90% Chardonnay, 10% Chenin Blanc
The climate where this domaine is located lengthens the ripening period of the grapes, which produces great flavor complexity. The cool evenings also give natural acidity or “freshness” to the wine meaning it keeps your palate alive. Aged in oak, lovers of white burgundy will be delighted at the wine, and the price!
AOP Coteaux du Languedoc
50% Grenache Noir, 30% Carignan, 20% Syrah
A blend of Grenache Noir, Carignan, and Syrah, this crowd favorite was awarded 91/100 by Wine Spectator, is a Feminalise Gold Medalist and a favorite of British wine scholar Jancis Robinson. This juicy organic red expresses rich fruit depth, brilliant acidity and remarkable freshness.
52% Cabernet Sauvignon, 48% Syrah
Food Pairing: We don’t have favorites, but let’s just say if no one buys this wine, Bear will be overjoyed! Lose yourself with this wine and Oven Roasted Rosemary-Laced Veal Chops; Beef Tenderloin with Bone Marrow-Bordelaise Sauce; Crispy Duck Pancakes with Hoisin Sauce.
